The Counoise was fermented carbonically and later aged with the Carigñan for 12 months in a 100% neutral French Oak. Wild yeast. Unfined. Unfiltered.
This tiny 4 acre vineyard was planted in 2014 in the heart of the Templeton Gap on loamy clay with southwest exposure and has been farmed organically ever since.
